Olivia’s Creamy Nando’s pasta

Today the volunteers had a catch up while cooking a really nice dish that Olivia shown us how to make and everyone was impressed with the ease and taste of this meal. Thanks Olivia from the team.





Put water in a pan and bring to boil then add pasta. when pasta cooked leave on side in a Siv.

Cut Chicken on a chopping board into mouthful size pieces.

Marinate chicken by pouring in enough Nando’s sauce to cover chicken and stir together (optional do over night leaving in a fridge.

On a different chopping board cut the chorizo then add to a hot frying pan with no oil on medium heat, the juices from the chorizo is enough to cook in. After 4 minutes or when cooked to liking take the chorizo out the pan and place into a bowl but leave the juices in the pan.

Use the same pan and add the chicken and cook until white all way through. Depending on oven hob it could take 6 – 10 minutes.

Then add chopped tomatoes, 1 table spoon of tomato puree and mixed herbs  (optional fresh or lazy garlic 1 teaspoon of each. Stir in cook for 2 minutes.

Then add all of the peri rub packet in stir in well, cook for another 2 minutes.

Then boil some hot water in a kettle and fill the tomato can half way and pour in to the main pan with chicken and add the cooked chorizo Simmer on low for 4 minutes.

After that add cheese or cream and stir in still on low heat for a minute or so then add pasta make sure stir all together for another 2 minutes then serve.

Lastly season with salt and pepper. Enjoy!!
